Home
of the Fourth Musketeers, Armagnac and rugby, the Midi-Pyrénées is
a multi-faceted region with sun, mountains and magnificent
landscapes of rich farmland. Here is the link between prehistory,
the Middle Ages and the Renaissance. Visitors can stroll the
cobblestone streets of the small fortified villages - "Les
Bastides", hike the rocky footpaths of the mountains or explore
a 12th-century Romanesque abbey.
The capital city of Toulouse is called
the "pink city" because of the rose colored brick houses
and buildings. It has an excellent example of a Romanesque
pilgrimage church the St. Sernin Basilica. Lourdes is one of the
most visited pilgrimage sites in the world. The Moissac cloisters,
which are located near the point where the Tarn and Garonne Rivers
meet, show a variety of themes and served as a model for similar
work throughout 12th-century Europe. Albi is the birthplace of the
painter Toulouse-Lautrec and home to a museum that commemorates his
work.
The Canal du Midi that links Bordeaux
to the Mediterranean was commissioned by Louis XIV in 1666 and the
original locks are still working today. This is an excellent way to

Cuisine
The
cuisine in Midi-Pyrénées is rich and strongly seasoned, making
generous use of garlic and goose fat. This is the land of foie
gras. The most famous regional dish is cassoulet, a
hearty stew of duck, sausages and beans. You will also find magret
de canard, duck breast filets, farci du Laurageais, civet de
palombes, a squab stew or the local poule au pot, chicken
simmered with vegetables. There is also seafood such as oysters,
salt-water fish, or piballes from the Adour river. There are
excellent regional wines, such as the full-bodied red Cahors, and of
course Armagnac to follow the meal.
